Didn't say it before, but Bountyhunter has reminded me, my absolute favourite author is David Weber for his superb Honor Harrington series. Although he does now need to change the focus to having the long promised war against Earth, the second Crown of Slaves book likes it will sort that out.

I have heard many good things about George R R Martin, I'll have to check him out.

I like the Dragonlance series a lot (I actually enjoyed Summer Flame as much as any of the others in Chronicles/Legends... my favorite "other" DL book was The Siege of Mount Nevermind)

(Especially) The (first 5) Chronicles of Amber by Roger Zelazny were great as well, and all available relatively inexpensively in one volume.

Some of my favorite sci-fi short stories are Rod Serling's adaptations of his Twilight Zone scripts. Also available are collections of short stories which were bought and turned into teleplays for the show.

Though I haven't finished all of it, Stephen King's Dark Tower series is a masterpiece. And I haven't read nearly all of it, but I found the Wheel of Time books by Robert Jordan to be very enjoyable as well.

I actually still love the Hobbit, by J.R.R. Tolkien, much more so than LoTR. I like the Va Dinci Cod, by Adam Roberts though it's stupid and a parody book. Bad sense of humour maybe. The Alchemist by Paul Coehlo is another favourite.

Do it! You won't be able to enjoy any other fantasy series after reading Martin's work, because it's so much better than anything else out there. I used to be a big Robert Jordan fan, but after reading Martin, I'm not even interested in Wheel of Time anymore.
